As an interpreter of the Alps, the chef uses the mountains not only as an absolute terrain for expression, but also as a creative guide. Through his passion for mountain sports and his respect for nature, he perceives landscapes, scents and textures that he transposes into his dishes with sensitivity.
Each dish is an invitation to discover his territory. Scents of undergrowth, mountain flowers, wild herbs, fish and crayfish from the lake, lamb and game from the Alps, beaufort... His culinary approach is characterized by a constant quest for authenticity and purity of products, while sublimating them with technique and creativity.
